How do you change the theme on Microsoft Office 2007?

Not like, style sheats or colours. I miss the old 2003 layout and can't be doing with 2007. Its all confusing.

A better way to describe it would be changing the interface.

Office 2007 does not have a ';classic menu'; option built in, but there are a number of third-party add-ins available that add Office-2003-style menus to Office 2007. Two free ones I know of are http://pschmid.net/office2007/ribboncust and http://in.geocities.com/shahshaileshs/me .
